Food trucks are all the rage nowadays in Seattle (as well as in many other US cities) and they show up in downtown Seattle as well as at popular work locations.
They sell anything from burgers to korean fusion to mexican.
Very good quality and not too expensive.
Much cheaper than in restaurants.

Restaurants in Seattle often have half priced Happy hour just before dinner time where u can get cheaper food/drinks.
Good way to sample the food.
Which reminds me if u like chocolate, check out Fran's at downtown Seattle near the waterfront.
They are a specialty chocolate store.
Their mochas are amazingly good as they use real chocolate powder so there is a rich chocolate taste.
Many people like their grey salt caramel chocs.
