Any recipe for med rare?
Follow this method. I opt for Thyme instead of Rosemary. Make sure the meat is well marinated. Cooking time depends on thickness of cut and also types of stove. To have a good sear, ensure your pan is smoking hot.

Cant beat the flavour and texture of grass-fed beef though.
Imho, this grade of beef is far better than grass or grain fed in terms of flavour and texture. Next on the list is dry aged.

Moi simply like hot meat with butter so just jiak $5 sliced beef from ntuc using portable cooker to always keep it hot. No need cut with knife and can just jiak meat with chopstick.

Good cooking style...

Just a good sear one each side for 3 mins and a nice steak is done...

Remember the 45mins salt in fridge and leave on open for 30mins to cool off.

Been awhile since my last steak. Decided to stock up some premium Ribeye. (Tajima Wagyu MB 4/5.)

Marinate with generous amount of salt and crush black pepper corn. Place it on a plate, let it sit in the refrigerator uncovered to soak up any excess moisture for 12 to 24 hours. This method gives you really nice crust since surface of the meat is dry.

Cooking method, pan sear, baste in butter with lots of garlic & thyme.

Tips - Add some oil to the butter to prevent burning & never throw away nicely caramelised garlic, pair it with the steak, tats all you need to enjoy a good steak.
where to buy at cheap price? AMK? This looks like Aussie "Wagyu". Is it?

What sort of baked potatoes? Those that are mushy on the inside and you add sour cream and bacon chips? If yes, go for russet potatoes, can get it from NTUC.

Yes, Australia Tajima Wagyu. Got it from a friend since he's supplying to restaurant. Give a call to butchery, check if they sell in block, cheaper to get one whole slab.

Where you got them? U age your steak or finish up the 6kg in a month?
Some times I'll keep more than a month in freezer since it's vacuum sealed. Don't have the right equipment for dry aging, if things goes bad, can get food poisoning.

These are dry aged beef. They've yet to remove the outer layer.

Actually I tried experimenting before vacuum sealed beef left in freezer for 1-2 months taste better than those fresh beef.
You do sous vide or normal pan seared
