In term of CPU power, you can only go to Xiaomi AX9000.
If you only care about wireless, then there are multiple choices -- Xiaomi AX6000, Redmi AX5400 Gaming edition, etc. They have 2.5G port as well. If you do not need the 2.5G port, then you can go with Redmi AX6000 as well.
Need some much cpu power meh? Anyway, my NAS only got 1Gbps, no reason for me to get 2.5Gbps port.
In that case, Redmi AX6000 may be a good choice. Redmi AX5400 standard edition can be considered as well.

I am very happy with the Xiaomi AX3600 performance. I stay level 4 and I can connect to my home Wifi and watch YouTube even from level 1 of my house. It is so good that I am considering getting another Xiaomi AX3600 as spares.
Yes that is a good option if you can still find new units in reasonable price. Take note Xiaomi has stopped the production quite some time ago.
If not, you can actually go with Xiaomi AX6000 which has similar or better wireless performance as the Xiaomi AX3600. Redmi AX6000 or Redmi AX5400 can be considered as well if you want a bit lower cost.

There are quite many used Xiaomi AX3600 selling on Carousell. Maybe I wait till people selling it at $30-$40 then I buy as spares.
Yes Xiaomi AX6000 has a weaker CPU compared to Xiaomi AX3600. In fact the only Xiaomi router which has a better CPU than Xiaomi AX3600 and Redmi AX6 is Xiaomi AX9000.

No. It is an old model with the same IPQ8071A CPU as the Xiaomi AX3600. It is not as good as Xiaomi AX3600 but cheaper. For quite some time it had the best price performance ratio among all Xiaomi routers. Both Xiaomi AX3600 and Redmi AX6 are obsolete now.

then wired back haul to a ax3600 to run a mesh system

Can share how big is your house? My house is 120sqm (about 1293sqft). With 1 x Xiaomi AX3600, I can get 120Mbps at the furthest point of my whole house.
I can even get connected to my router when I am downstairs at level 1 eventho I stay at level 4.
