After reading your itinerary, I don't know where to start :s13:
1) too many markets, you will be bore with it. You can search through tripadvisor to check if that market is worth to visit, some not worth so why waste your time there.
2)pointed out by @ApeTruelove. Chatuchak Market is weekend market, so only open on sat and sun.The Camp Vintage Market is just beside it, so can be done in 1 day. Union mall and JJ mall are nearby, do check map for easy planning.
3) Khao San Road is happening in the evening with lots of amk and backpacker, I don't think you will like it.
4) you can group up attraction like, Chinatown, wat pho, lhong 1919. Chinatown is busy place in the morning and turn to night foodie place in the evening.
5) Pratunam got many malls example Big C, The Market etc, not just Platinum Mall and Pratunam Market.
6) Safari World - Need to drink more water, it's very hot there. There are many shows, get the time table from the counter, try to go 10 mins earlier for better seat, show with water don't seat too near, beware of water splashing. The last show end around 6pm but mostly book tour/klook with end around 3.30pm so check your booking.
7) lastly, your gf will love this place Talad Rod Fai Ratchada, so go early, maybe add another day if you/her like it. :D

Where do you suggest I go during the day time on Thursday and Friday though?

Which is a bit wasted, but transportation is provided that's why!

Have put more emphasis on Ratchada, hopefully there's a lot of stalls open!
Will it be more happening on Thursday/Friday?
Or Tuesday/Wednesday?

Which markets should be cancelled out, in your opinion?
Maybe Union Mall no need go, cause Victory Monument I definitely will be there.
Taking the transport from Century Mall to Safari World, that's why!

Wanted to go for a day trip to Ayuthaya or half day walk around Bang Krachao, but seems like not much time?

Will cancel some of the markets, maybe only head to 2 of them like CTC Market and Talad Rod Fai.

Oh and do you guys know anything about fermented crab deliveries?
I heard, they say use Line and order, but how to go about doing it?

Thur you land, check in, you should be tired. rest then go Ratchada/ pratunam for dinner + shopping.
Fri, you can go Chinatown or you can book a half day trip to Ayuthaya. Can book online or you lazy, book through hotel reception.

If not enough time, book a trip save trouble and time.
Of cos if can, diy the best.
You can also walk to Chinatown from Hua Lamphong, more fun, more things to see and eat.

Any idea roughly how much is taxi/ grab cost from bangkok centre (4 face buddha area) to suvarnabhumi airport? Saw Klook transfer option and thinking should purchase from Klook or Grab to airport cheaper.

Grab will do. Around 400 baht bah. I rem my last trip from airport to T21 399 baht.

399 need add in the toll charges? or inclusive already ?
rmb that time using grab app, tested for t21 to airport, price is about 379
but in the evening, price up to 460+ onwards

Not sure if location plays a part ...
Went to erawan shrine at 4 face buddha ...
Used grab app to get a cab from there to silom area, is about 250b already
in the end we took the train back to silom , since the price is too much.

Silom to Four face buddha - 105b
Four face buddha to Silom - 250b ...

The driver play hide and seek with me, in the end I take taxi from departure area. Less than 300 baht exclude toll.

Departure area got 1-3 lanes for cars, next few lanes for taxi. There are lots of taxis there but I think they cannot wait for too long. Just ensure they use meter.

Got a period they got police guarding the gate. Make sure no arrival tourist leave airport from departure level. Also your luggage must be handy so that u can board the taxi fast. As u mentioned taxi are not allow to pick up passenger from there. Since Airport-rail started operation have stop using this trick.

Previous trip I went, take meter taxi to sur airport less than 300 baht.

My previous trip hotel help me to call for a taxi and i said must meter. But when go up the taxi, the driver say no meter and fix rate. I forget how much he charged me though.

Previous trip I went, take meter taxi to sur airport less than 300 baht.
