Been awhile since my last steak. Decided to stock up some premium Ribeye. (Tajima Wagyu MB 4/5.)

Marinate with generous amount of salt and crush black pepper corn. Place it on a plate, let it sit in the refrigerator uncovered to soak up any excess moisture for 12 to 24 hours. This method gives you really nice crust since surface of the meat is dry.

Cooking method, pan sear, baste in butter with lots of garlic & thyme. (Make sure the steak is at room temp before cooking)

Tips - Never throw away nicely caramelised garlic, pair it with the steak, tats all you need to enjoy a good steak.

Update: 1 day later. Steak after sitting in the refrigerator for 24 hours. These are the ingredients I'm cooking with. About 1/3 stick of butter, olive oil (DO NOT use virgin olive oil) and around 1 & half cloves of garlic. Can't find fresh thyme thus using dried version instead.

Basting with butter.

Depends on thickness. If it's 1 inch thick, perfectly fine with just pan sear. Am quite lazy to use oven method, therefore only using pan.
