MSI B450M Mortar max with 4 ram slots (1) $145+
2X8GB 2666Mhz Ram (ok, if possible 32gb) $100+
WD Black 500GB NVME M.2 SSD (2) $120~$150
Nvidia GTX 1660 Super (3) $280~320
FSP hyper K 500W (4) $50+
Casing Tecware Nova M
Intel AX200 WiFi card with Bluetooth (5)
Windows 10 Pro ($10)
$905++ then the rest u spent on cpu cooler, casing fans, accessories....

(1)Motherboard wise is about pricing. Reliability...i only recognize asus.
(2)U can see slight diff but overall not recommend...i rather u use this money to get 1 tb ssd. m.2 is located beside gpu, the heat factor also affect. Then u need another hdd for storage.

(3)zotac with 5 years warranty...price $280~$320. gpu ram (vram) is very important.
2060 is pointless....
(4) is ok but i prefer quiet....fanless psu during editing..
(5) i use cable.

Now got a new problem.
My wife prefers casing to be smaller so that she can place it on table. Mini itx comes to my mind but i don't think it is good idea to squeeze the components into something so small and later hard to expand or upgrade. Other things i tot about is the noise, heat (avoiding switching on aircon) and electricity bill. I am considering the mini itx with water cooling from aftershock if this is the solution. For graphics card it is now between gtx 1660 super and rtx 2060. I think i can survive with gtx but am missing out rt cores, tensor cores and nvidia dlss. Are these important?

Another way is just get a high end laptop at slightly below $2k, which solves most of the existing problems but next time if need to upgrade components it will be almost impossible.

TBH, looking at your requirements, a mini-itx would not be a problem.

But my mobo choices will be greatly reduced? Is water cooling appropriate? I want to reduce noise... Able to use fanless psu?

I would say go with bundle B
The 32gb ram would help with some of the stuff that you have stated.

I have configured a mini itx that will cost around $1.8k to 2k.

I wonder which of the motherboards would be better in terms of value for money and reliability/durability. Note that i will not oc my computer.

As you are building an ITX, i think its important that you pick a motherboard with
1) the features you want, i.e wifi, thunderbolt etc as you will not have space to add these later due to limited space and pcie slots
2) good vrm cooling but not to the extent where the heatsinks sont fit in your case
