the tea plantation actually in my initial itinerary but my concern is by the time i leave golden triangle to mae salong will be late afternoon and the road will be dark by early evening 5-6pm making the mountain roads a bit hazardous to drive.

Since you drive in Chiang Rai, I think you can try self drive to Doi Inthanon.
I did Doi Suthep Temple and Mae Kampong. Doi Suthep Temple go morning not so hot.
Can go mae rim and old city.
Later I add a few more.
Chiang Mai’s X-Centre indoor go kart got 2 seater
816 Moo 1, Mae Rim-Samoeng Rd., Mae Rim 50180, Thailand.
Mae Rim Shooting Range (near X-centre)

Warorot Market
Jing Jai weekend morning market
Saturday and Sunday walking street
Malin Plaza (University) – night market

Mae Hong Son a bit too far, will leave it to my next trip. As first planned to stay there for 1 night then go see the sun rise at kew fin but will see the situation before deciding.

I didn't notice until today that you are planning for Dec.
I did Khun Chang Kian (see sakura), Doi Suthep and Mae kampong on Jan 2023.
Khun Chang Kian very steep road, best to hire driver as the local went there every year. I start very early at 7am, reach there still early, very few cars coming down hill. Certain part of the road is single lane but local use it for 2 way traffic. Certain part of the road condition are not so good.
Mae kampong is out of the way but I add in to fully utilise the hire driver. Return to airbnb at about 3- 4pm.

Dec is cold season, prepare yourselves when going mountain. I'm at Doi Inthanon peak with 5 degree. Luckily I prepare for it.

I always book with hertz so quite a good rare for vios. Usually this rate more for yaris.

Could consider Chiangdao but might need detour since your plans seems more on the other side. The roads are quite okay also.

i actually selected yaris activ since it is the same rental price as the vios but don't know why my invoice indicated vios or equivalent. original rental was 9910 bht but i used this code HKTCSD3 and got to rent the car at 7177 bht.
Chiang Dao will need to wait for next trip together with Mae Hong Son as too far out from where i staying.

going to be my first time in Chiang Mai...will be spending about 5 night...
is it advisable to rent motorbike in chiangmai to roam around the city and also the side trip to some of the waterfall or elephant area?

I should be booking a day tour to Doi Inthanon National Park, knowing the long and steep journey...

If you have drive motorbike in other country before, then renting will be easier to travel.
Doi Inthanon National Park tour include 2 waterfalls.
There are many elephant sanctuary, I didn't go, so can't advise you.

How’s the traffic in nimman area? Looking at staying at that area.

I stay at Liv@condo, just 5 min walk to One Nimman.
Nimman road is always busy, non peak hours still not too bad. Nimman area is full of cafe and restaurants.

Take note: Nimman area is where the planes take off, so can be noisy. Planes are smaller plane like scoot/ air asia/ Thai smile etc... I stay at Liv@condo ground floor, at first didn't notice after that find it a bit noisy. Overall still ok. Nearer to the airport direction, noise level may be higher.

For 5 nights, recommend to stay Airbnb or hotel?
Depend whether you like hotel service or you like homestyle. Airbnb got no room service/ change towel etc.. Hotel in Chiang mai is cheaper but good location one can be expensive.
Airbnb is cheaper than hotel, location need to spend more time on researching. Most airbnb don't tell you the specific location. Airbnb also won't give you bottles of water daily, need to buy yourself.

No bro don't ride in Thailand if you got no experience. If you ride in Thailand like how you ride in sg, you be dead within an hour on Chiang Mai road. Things that doesn't happen in sg will happen in Thailand. Like cement truck rolling over you or doing a turn to pour cement all over you, truck from opp lane come into your lane at 100km, car doing right turn and bang right into you ect...
