This is also the one I frequent the most (since it is relatively near my place :o ). I like their kind of thick zhup consistency, especially after it soaks in for tabao. The wok hei is very good, smoky even. Everything about the taste is just... rich. That's why I only have it once in a while, because jelak. :o But their chilli works well to cut through that, if you can handle the heat (VERY spicy). For me, a tiny dollop is enough to liven up the HKM.
Hope they dun start spread their wings and bring down their quality.

I tried Chuan HKM $9 a few months back.
Can say that it is above average.
Did not disappoint me but also did not stun me.

I guess every one have their holy grail for HKM.
Hope you can nail it one day and share with us.
I also want to find out as long as it is not in the Far West.
Haha. Slowly. The last 2 days my BP a bit scary. Diastolic sometimes 96, sometimes 105.. usually 90-95

let me take a break 😬😬

Dun think HKM will really floored your health.
It is not like fried chicken.
Or else walk one hour inside a air con mall after your conquest.

I like the black hokkien mee more, jiuhu style one, what is it called? Anywhere to eat in sg?

Although both are fried noodles, they are actually different dishes. You cannot compare them within the topic of which Hokkien Mee is nicer, nicerer and nicerest.

Used to patronised a cafe located @Grid basement… Cafe name I think was Heritage n Taste something like this..
The HKM really damn shiok especially the special haebee belachan chilli and pork lard..
Plus point is air conditioned place but sadly closed after 3 months should be due to rental n lack of crowd…
Really wasted😰 as the kopi n teh and other food also not bad.. Haizzzz..

only eat this once in a blue moon, very unhealthy

Practically all our hawker food are unhealthy.

The main reason why it is nice is because it is very sweet. Th secret, apart from the sambal chilli, is the sugar. They stock or zhup or gravy is basically prawn shell, pork bone and these days, it taste the same eveywhere because they take from the same supplier who makes them in a central kitchen or factory (Same for chicken rice btw..all from the same supplier, all tastes the same).

In the old days, there was wok hey because they fried it over charcoal in a wok which had been seasoned. And they didn't rush when frying, so you had to wait but it was worth the wait. And it was also not merely about lard, which of course was necessary to make the noodles smooth, and we also adapated to like the taste of this oil.

These days, there's no wok hey. Those who claim to have wok hey are actually using a powder that's invented by jhk, that has the wok hey taste, that's all.

So, today even a zoomer can start a stall selling hkm, just fry ah fry ah, no wok hei, and then add the zhup that is delivered to him by the supplier.

Other dishes which can do this (take from factory) are chicken rice and ngoh hiang.

One dish you can't take from central kitchen is char kway teow. The ah hias of old had died, and this dish will become extinct. Even if somebody tries to sell it, he just can't do it the same way..

cai png is another that you can't take from a central kitchen. You need a lot of skill, to know the recipe, and how to cook those various dishes. This is why unlike hkm which someone said was being fried by a Chinese, cai png has to be cooked by the tau chiu himself.

I ate the “original Simon road” hkm today. Walked around to buy dinner, and chance upon it.

dry version(edit must be dried as I tabao the hkm). Got some hints of wok hei.
Served with sweet sambal, and sambal belachan

The chilli is scary level for me.

I usually say no chili during ordering but the dude won’t remember.

then when buzzer ring, I will faster go to collect and hopefully ask the guy don’t put chili and usually fail, he put already.

When reach back table, I need to scoop out and the remaining chili left (10%) is just nice for me.
Haha same... But I do like how the chilli tastes, my type. Only the spice not my type. :o
just went today again, business was good, ~15min wait during 5pm+
yeah i love their chilli, mixed everything into their savoury sauce, never fails to sweat + some runny nose after finishing :s13:
one thing to highlight is i like that their noodles & thick beehoon are of firm texture & not soggy despite their rather long period of high heat stirfrying
however something i noticed thou, their hkm always have some charred bits and some black spots

Hope they dun start spread their wings and bring down their quality.
hope so

Looks like I regretted not going ah Jie on Friday. I must try again even if it takes one hour transport in the bus
go try if haven't, i personally highly recommend
