For my case and IMH(umble)O, for 2021 phones purchases and usages:
(Iam looking at Camera, Battery life, charge speed and overall fluidity. I do not game)

-Google p6p is B+ grade (US set) (still immature with this gen, its like the huawei p10 pro (or Mate 10) couple of years back before p20 pro. Still lacking that polish to really be big boys tier/grade)

-Samsung S21ultra (snap dragon HK set) is A (my only phone is the past 4 years that I hold onto as primary phone for 7 ish months long, the rest are like 4 months or less, in comparison,S20ultra lasted only 3 weeks)
This is my phone of the year, it would have been A+ if the software did not slow down a little by the 6th ish month

-Iphone 12 pro is A-
Really nothing to complain about apart from the fact that I cannot get used to iOS's minimal-ish settings and lack of customization options. If you want a good phone out of the box or point and shoot all the way. This is the king period (and thus the Mrs owned this)

-Oppo Find X 3 pro is B+ (SG set)
Camera is not as good as I expected although it does have a one and only microscopic lens

-Vivo X70 pro+ is A- (Chinese set)
King of potrait (girls only) and night shots but it lacks consistency unfortunately (if you take 4 shots of the exact same settings, 1 or 2 might turn out to be drastically different...

-Xperia pro I is A- (SG set) (if you appreciate the natural kind of image and plays with Raw and is ok with the pricing)
-B if you take out of the box photo and prefer uniformly bright computational photos
-C+ of you consider the pricing + cannot appreciate true to eyes images (nothing wrong with this, its preference and the mass are educated/brainwashed to regard computational imaging to be the superior ones. It's just like white bread Vs sourdough bread scenario)
I love the narrow design as I prefer to single hand use, this aspect is peerless.
Autofocus on the camera is market leading too.
I still think 4k on a smartphone screen is super overkill and is wasting battery
The video capabilities is king (if you know how to tweak and its not hard actually, I think this is the only smart phone that you can tweak shutter speed while videoing and that impacts stability wondrously) but the heat management while taking video is bad...
-the weakest in terms of image processing among the flagships but you should not be getting this phone if you are looking for out of the box images

Explanation same as Pro I.
The imaging sensor is inferior to pro I but is a little cheaper

Huawei P50p (chinese set, Harmony OS)
is A (if you can live without GMS and 5G). Huawei is very mature and good in smartphones making by now.
Imaging is consistent and good but no break through no thanks to the US embargo
is B- (if you need GMS like me since my company uses Google services)

1 thing to highlight, the battery charging tech of the chinses OEMs are leap and bound above the others.
Whether such tech corrodes the battery longevity is still arguable as there are no proper studies.
Imo we can reach a middle ground. Fast enough but not crazy fast (like Oppo's).

I haven't tried 5G but have found that turning adaptive connectivity reduces the network standby battery usage by about 10%.
Overall have been pretty happy with the battery life.

For me: (after the Jan update)

adaptive connective ON
adaptive battery ON

I see improvements on battery life.
The 5000mah p6p behaves like a 4000mah
Instead of 3000mah phone pre Jan patch.
