Can I drink water during confinement?
Once you delivered your baby, your body tend to be weakened. To gain back iron in your body and rebuild back your blood, it is recommended by olden Chinese to drink red dates juice instead of water. Although I do not buy into the idea of following the olden practices, I tend to believe this. After I had delivered to my first baby, my body tend to get cold easily. It is advisable to take the red dates juice for 1 month for those under went delivery and 2 weeks for those who had miscarriage.

For a delicious red dates juice, I have given two recipes.

Simple and inexpensive way :

2 cups of red dates
1/2 cup of dried longans
10 glasses of water

Method :

1) Wash the red dates and dried longan
2) Pour water into a pot and add in item (1)
3) Boil the above for 1.5 hours in a medium to low fire


Luxurious way :

2 cups of red dates
1/2 cup of dried longans
4 big size dried honey dates
1 1/2 tbps dried wolfberries
4 medium size sticks of dried codonopsis pilosula root (党参)
3 pieces of dried astragalus membranaceus root (北芪)
10 glasses of water

Method :

1) Wash all the above
2) Pour water into a pot and add all the items
3) Boil the above for 1.5 hours in a medium to low fire


Note : You may drink the juice without eating the boiled ingredients. Drink it hot or warm. You may fill the juice into a flask and drink it anytime. The above recipe may last you for 1 day for those who does not drink a lot of water.

The second recipe seems to have a smoother texture juice.

All the ingredients can be easily found in Chinese medical stores. Do make sure the dates that you buy do not use sulfur as preservatives.

Chicken and Oyster Mushroom Soup [2 servings]

Ingredients:

2 chicken whole leg or 2 thighs (cut small)
1 tsp salt

1 cup of ginger (roughly 6 inches), smashed with the back of a cleaver. (If u like to eat ginger, by all means, slice it or julienne it)
2 tbsp oil
6 cups water

200 gm grey oyster mushroom (torn to smaller pieces)


Method:
1. Marinate chicken pieces with salt for 15 minutes.
2. Heat wok, fry ginger with oil until slightly golden.
3. Put in marinated chicken and stir fry for 3-4 minutes.
4. At this point, if you want to discard some oil, you may do so.
5. Pour in water and bring to a boil. Simmer chicken soup on medium heat for 10 minutes.
6. Add in oyster mushrooms and simmer for another 3 minutes.
7. Taste and place onto a bowl.

Black date soup with black beans

Try a sweet soup that’s especially great for mummies who are anemic because dates are rich in iron content. They also contain a lot of dietary fiber, protein and various B vitamins. Black beans promote bowel movement and are a fantastic source of antioxidants. Add rock sugar to sweeten up this black date soup.

INGREDIENTS:
200g black dates
100g black beans
Sliced ginger (amount is up to own preference)
2 litres of water
Rock sugar (to taste)

PREPARATION:
Soak black beans until soft (takes about 1 hour). Pour away the water after soaking.
Wash black dates and cut all into half.
Add all ingredients to a pot and let it boil.
Bring to low heat and simmer the black date soup for 2-3 hours.

Traditional Chinese Sweet Potato & Ginger Dessert Soup

INGREDIENTS

SERVINGS 4-6
2 large sweet potatoes
2 inches fresh ginger root, skinned and sliced (approx. 45g)
3 1⁄2 cups water
8 dried red dates (optional)
1 (60 g) slab raw brown sugar (approx. 60g, if not available, can be substituted with rock sugar)

DIRECTIONS

Peel, wash and chop sweet potatoes into chunks.
Bring water to a boil; add ginger, sweet potatoes and red dates and simmer for 12-15 minutes.
Upon boiling, add slab sugar and boil until sugar dissolves.

Fish tail and papaya soup recipe

Believed to increase milk supply, fish tail and papaya soup is often suggested to breastfeeding mothers in confinement. The crunchy peanuts in this soup will offer textural surprise, while soft papayas and fish will work together to offer various antioxidants and cell-building protein. Tangerine peels and ginger add zesty tinges to already flavourful broths, and remaining portions can be kept in the slow cooker for multiple servings.

Ingredients
• 1 kg fish meat
• 100g raw peanuts
• 1 half-ripe papaya (cut into wedges)
• 1 piece tangerine peel
• 2 slices old ginger
• ½ tsp salt
• 1 tsp sugar
• 1.5 liters boiling water

Preparation
1. Soak peanuts in water overnight. Drain before use.
2. Skin and halve papaya. Remove seeds, rinse and cut into wedges.
3. Heat oil and fry ginger slices. Then fry fish until brown.
4. Put all ingredients in a slow cooker and simmer for about 2 ½ hours.
5. Taste and add seasoning if preferred.

Breakfast are vital for woman in confinement. A bowl of hot ginger rice helps to warm up the body and boost up energy early in the morning.
Cooking Tips : Use only old ginger as they are much more spicy and more effective in dispelling postpartum body 'wind'.

Fried Ginger Rice [2 servings]

Ingredients :
2 bowl white rice (overnight cooked rice is best)
50g ginger (chopped)
1-2 eggs
2 tbsp sesame oil
1 tbsp soy sauce
pinch of pepper

Method :
Heat sesame oil in a wok, then sauté ginger until fragrant.
Add in a bowl of white rice and stir-fry, then toss in egg and mix well. Season with soy sauce and pepper, dish out.


Seems a bit plain, I'll add stir fry chicken in this dish

Lemongrass Chicken Soup

Ingredients :
1 kampong chicken (or use one small chicken)
8 stalks lemongrass
120g old ginger
100g galangal
1½ liter water
Dash of salt (seasoning)

Method :
Remove head and feet of kampong chicken. Smash the lemongrass.
Smash ginger and galangal and then grill with charcoal until slightly burned. [Optional]
Boil the water and put in all ingredients, once boiled, turn to low heat and simmer for 1 hour.

Steam Cod Fish With Ginger & Wine Recipe

Ingredients:
1 slice cod fish
30g old ginger
½ tbsp Chinese wolfberries or goji berries (Qi Zi)

Seasoning:
1 tbsp soy sauce
3 tbsp rice wine
½ tbsp sesame oil

Method :
Wash and dry the cod fish, at the same time, juliennes ginger.
Marinate the fish with seasoning, put into a steaming plate, sprinkle ginger and Chinese wolfberries on top, steam for 10 minutes under high heat, and the dish is ready to be served.

hello..

we are traveling to a faraway land for a full month, will need to learn some basic Chinese cuisine to keep our tummies alive..

im impressed with ur cooking.. do u conduct courses for beginners? my wife would most definitely be keen.

Hehe which far faraway land are you heading to? I'm heading off next month myself. For good this time. And YES! Home cooked food does make a big difference when you are overseas.

Steamed tofu with egg and minced chicken

This recipe is tasty, nutritious and quick to prepare, taking only 20 minutes tops. Eggs and tofu are rich in protein, which is necessary if you want to boost your breastmilk supply, while minced chicken promotes blood circulation. We reckon this should be every mummy’s recipe of choice to increase breastmilk.

Recipe adapted from Successful Breastfeeding: A Practical Guide, by Kang Phaik Gaik

Ingredients
1 block of soft tofu
1 egg
200g minced chicken, defrosted
salt or soya sauce (optional)

Preparation
1. Mash tofu into fine pieces.
2. Beat the egg.
3. Combine mashed tofu, beaten egg and minced chicken in a microwaveable bowl
4. Add soya sauce or salt for taste.
5. Steam for 10 to 15 minutes. Serve while hot.

Stir-fried kai lan with pork and ginger

Kai lan is rich in iron, antioxidants and has anti-inflammatory properties. It contains beta-carotene, Vitamin K, and calcium, which is great for bones. It is a great vegetable for ladies who have just given birth because it can help replenish iron and calcium loss. If you want a simple meal that has both vegetables and meat, this stir-fried kai lan with pork dish paired with rice is perfect for you.

INGREDIENTS:
100g minced pork (marinated with some soy sauce or oyster sauce)
300g kailan (washed and plucked)
80g shredded ginger
2 tbsp sesame oil
½ tsp chopped garlic
Some sliced shallots
1 tsp light soy sauce
Water

PREPARATION:
Heat up sesame oil in a wok.
Add in shredded ginger and stir-fry until fragrant.
Throw in chopped garlic and sliced shallots, stir-fry them until golden brown.
Add minced pork, stir-fry until cooked.
Put all of the kai lan in, stir-fry for 1-2 minutes and add in soy sauce.
Add a little water and mix well.

Honey drink with snow fungus

Tired of red date drinks during confinement? This refreshing beverage is an excellent alternative for mummies in confinement. The main ingredient, snow fungus, is known for its medicinal properties and rich in iron, phosphorous, calcium and Vitamin C. Paired with dried longan and ginger juice, this honey drink confinement recipe helps mothers to purge the “wind” and sleep better at night.

Ingredients:
15g snow fungus
Dried longans (amount is up to personal preference)
2 tbsp honey (you can add more if you prefer to be sweeter)
2 tbsp ginger juice
1000ml water

Preparation:
Soak snow fungus for 10 minutes or until expanded.
Rinse it, cut off the stubs and cut all into bite-size portions.
Wash the dried longans.
Put all ingredients (except honey and ginger juice) into a pot and bring it to a boil.
Let it simmer for 20-30 minutes on low heat.
Add ginger juice and honey and let it boil again.
Turn off the heat and enjoy the honey drink while it’s still warm!

Chicken soup with vegetables and tofu

Like most meats, chicken provides lots of protein to mothers during confinement. This recipe also uses tomatoes, which are high in antioxidants and help to lower hypertension. Combined with ginger and tofu, this delicious chicken soup is a simple dish that mommies can cook for themselves during confinement.

INGREDIENTS:
1 chicken
2 large onions
3 tomatoes
1 soup tofu (cut into 4 large cubes)
3-4 slices of ginger
2 tbsp light soya sauce
1 litre water

PREPARATION:
Remove any feathers and wash the chicken thoroughly.
Blanch the chicken quickly.
Boil 1 litre of water.
Add the chicken, onions, tomatoes and ginger to the water.
Bring it to a boil and let it simmer on low heat for 45 minutes to 1 hour.
Add tofu in the last 10 minutes and soya sauce to taste.
