Mango-stuffed French Toast

1 large mango (Slice into thin slices)
4 (2") thick slices french bread
2 large eggs, beaten
1/2 cup 2% milk
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Few drops vanilla essence
3 Tbsp. butter

Sauce
Maple Syrup
Remaining mango

Using a sharp paring or serrated knife to carefully cut and create a deep - about 4” long - slit into the bread. Slide 1-2 mango slices into the slit in each bread slice, and then set bread on a baking sheet. (I like to grill the mango slices before stuffing as it will intensify the sweetness)

Combine eggs, milk, vanilla essence and spices in a large bowl. Preheat your electric griddle to, or set a large skillet over, medium to medium-high heat, melt and spread butter on the cooking surface. Dip 
the bread slices in the egg mixture. Cook the dipped bread slices, in batches if needed, 3 to 4 minutes per side, or until golden brown, and then divide among plates.

Heat up maple syrup in a small pot, add finely chopped mango slices and cook till the delicious tropical fruit melts into yummy bits.

Serve toast and generous serving of fresh mango maple sauce. Eat while it's hot and crispy!!

Ingredients (Serves 3 hungry adults)
200g Bee Hoon 米粉 (Rice Vermicelli) - 200g is that is half packet of it.
1 Nariscuss Canned Pig Trotters
120g Choy Sum 菜心 (Literally càixīn in Mandarin)
60g Fresh Shitake Mushroom, cut into slices
2 sprigs Spring Onions, cut into 2 inch length
35g Carrot, jullienned
1 Chilli, julienned
3 cloves of Garlic, minced
1 tbsp Oyster Sauce
1 tbsp Light Soya Sauce
few dashes of Pepper
100ml Water (to give moisture during stir-frying)

Method
Soak Bee Hoon in water for 30mins and prepare all the veggies (wash and cut) accordingly.
Give the Bee Hoon a few scissors cut. Drained and set aside.
Heat wok, add a tablespoon of cooking oil, fry minced garlic till fragrant.
Add in Carrot and mushrooms, and give it a quick toss.
Add in Canned Pig Trotters, stir. Then add in Choy Sum and Bee Hoon, stir well.
Add in Oyster Sauce, Light Soya Sauce and dashes of pepper, stir well. Add water to give it more moisture. If you want it more wet, just add more water. When you see the Bee Hoon is soft and all the liquid are almost absorbed, add in Spring Onions, give it a quick toss, heat off and dish up.
Garnish and serve.
