Ok, i got my applecare plus at A.Lab PS at 10% off. And yes, the warranty seems to start from the date applecare plus is active. I got mine today and the warranty expires 27 Sep 2023.

u can skip this step then e app that’s left behind on e old phone is e offending app. can trace from there

WIth so much junks in her old iPhone, I would suggest to setup as new. Her photos and videos most likely in the cloud? I think Apple can temporary increase her cloud storage for 3 weeks(there's an options i think) and all her photos and videos will upload onto the icloud. Once she login the same Apple ID, her photos and videos will be ported over her new iPhone. App data will not be there cos setup as new.
