Since these results are inconclusive, I will just comment based on these results.
1. Apps that load videos / images use up a lot more data than just words.
2. If you have iCloud on, data is probably being used to do occasional back up of your app data.
Compression algorithm could be better BUT would affect video/image quality. Most videos on average, consume about 20-80MB of data.
No, not all suffer from this mobile data change. Was on 12GB like you and am now on 4GB. I guess I am a light user as I don't usually exceed 3~GB/month (even when on my 12GB plan).

1. Yes definitely apps loading video / images consume a whole lot more data than words i.e Mail app without photo/video attachments.
2. I do not use iCloud unless I am on Wi-Fi. In fact, I only sign in to my iCloud for backup at home.
HAHA and I'm definitely not saying that all people on 2GB/3GB/4GB are suffering. I meant people on these low cap plans, who have data usage patterns mirroring mine. Then it could be a struggle to stay within such bundled data caps.
I usually use data unless I'm near to my router. My wireless network has been rather wonky of late so it's quicker to use data. But that's another story.
