Yup. Just go to Settings>Wallet & Apple Pay>disable Double-Click Side Button.

Wanna Pay by Apple Pay in merchants, just open up Wallet App.

On their iPhone XS product page, they stated their sets were brand new sealed set and activated. Does this mean they reseal them?

They bought directly from apple store, they probably activate the phone before ship it out.
Unless you bought it from telcos.
