U can flash a custom recovery with Odin to do a nandroid backup, which will save everything in your storage/sd card and the state of your phone. Rooting doesn't delete any files, by the way. It's when u flash a custom rom that ur apps will be wiped and u will want to use titanium backup(or other apps) to back them up. Just have to flash a older kernel, Towelroot your phone, then flash back the current kernel.

You can use their ND3 kernel, then flash back to your correct kernel from the list there.
