Actually, I'd rather limit a single NVMe M.2/SATA SSD to boot drive for OS, I've seen others buy a 1TB SSD and partition it to 2 parts (one for OS and one for storage). I'd rather have a 256GB NVMe M.2 SSD just for OS, and bigger capacity SSD (be them NVMe M.2 or regular 2.5" SATA SSD's) for storage (games, or other stuff).Just ordered adata sx8200 pro 512mb as boot n app drive

That's why I have a 256GB NVMe M.2 SSD just for OS and other relevant programs, and separate SSD's for games. Load times between SATA SSD's and NVMe M.2 SSD's is neglible at best, but difference in load times between SATA SSD and platter HDD is quite noticeable. I mean, for Metro Exodus, my game levels would often load a fair bit before Artyom can finish his monologue.
