Yeah, considering how crappy I consider Aston's steaks to be, Bizen was surprisingly good (considering the price. I mean, you go Meidi-Ya buy raw beef already 300bucks/kg).

I liked the striploin. Wife had rib-eye which was a bit too fatty for the both of us. Oily, fatty goodness.

Well to be fair, with the rise of home use sous vide products, cooking steaks has never been easier.
I don't sous vide my steaks anymore, I don't like the texture that the braise gives to the meat. I still think steaks need to be cooked with dry heat.

Sous vide is great, I got a Weber grill to finish it off with dry heat.
It’s important to time it correctly else the texture not good.

If not this grill will help cook steaks nicely, I usually throw in some wood to get the smoky flavor

For dry heat after sous vide simply Pat the meat dry with a napkin.

Then use very high heat to cook it. I use a blow torch to finish the steak and it comes out very well with crispy crusts. Just take a cheap wire rack and place it there. I put a skillet below it and let it rip.

I cheapskate. Use those type of gas cylinders in steamboat + torch head.

If you wanna smoke can do it separately after finishing the steak and use something to infuse smoke like a smoke gun.

Portion huge and pricy. It’s on the high end side as compared to majority of the steakhouses. Nice ambience, romantic. Should try the lava chocolate cake they prepare it on the spot. My Husband loves the steak a lot.

Who tried Morton’s before? :) come share experience

Always cook my own steak, its very rare i find a restaurant that can do it to perfection on how i like it. Standard cuts like Rump/Ribeye etc.

One incredible place was Atout in dempsey, its pricey but its Ribeye steak in a pepper and brandy sauce, holy mother of # it is good.

I always buy my meat from baggiesbiltong.com , cheaper than supermarket and great quality cuts. $12 for 300g rump is good value ! They also have ribeye, tomahawk, sirloin but i haven't tried those.
