I think its not really the same with Mercedes because Mercedes don't limit production artificially. They will sell you a fleet of E Class if you want to.
For Rolex, they limit production of certain models. This artificially drives up demand, and some people have the "queuing-up-must-be good-mentality", so they join the waiting list, and/or even pay premium for these models. Honestly, the movement in Rolex is almost the same across its Sub/SD/YM and DJ range, with slight variation in the GMT, Daytona, DayDate and SkyD. Who is to say a sub is better than a DJ?
In my previous post, I wrote about giving up buying these Rolex models at a premium, but to explore other brands' sports models - AP Royal Oak, GP Laureato, Piaget Polo S, Blancpain 50 Fathoms, JLC Master Control and Geophysics (not exactly sports watches, but with bracelets), and at the Daytona price, you can buy the excellent VC Overseas with 3 different straps
These watches are all priced at a discount now. I do agree that certain Rolex sports models retain value well, but if you buy at a premium, you are quite likely to lose money if you sell away in the short term, just like any other watches. And we don't buy watches because of the value, but more because we like them right
