Its about 50% higher than SkoAB and Carmina website price, maybe if price higher, have service and got some special privileges like priority MTO service which delivers in half the time, or shoe polishing package thrown in I'll feel more worth it.

Vivek's service is so good that I decided to support them, and I ordered an MTO derby shoe during the 2nd week of their opening. First time I try shoes and got people help me fit into the shoe and tie the lace. Really accommodating, feels like I am a very valued customer, although my wallet might disagree with me. haha!

I totally understand how you feel. You will get the same treatment at C&J in London. Great service but at a great price.

You don't get what is resole. The sole of the shoe is the whole bottom part after the leather uppers. Your DW has only changed the last layer of the sole to rubber, which this process is simply to add a layer of vibram/topy rubber to the soles of the shoe.
Your DW sole is glued to the leather uppers, is to remove the sole means to rip the whole sole off which DW won't do as the glue will leave residue and maybe even damage the uppers.
Only stitched soles (example Goodyear welt) can do resole as the stitches can be removed and the whole sole can removed and then replaced with new one.
Hope you understand what is 'resole' now.

Second that as i recently visited c&j in london.

To be honest, these days i would much rather good brands won't be available in SG shops because that would inevitably mean ridiculous markups and a risk that i also can't buy them at their previous prices online anymore

Added vibrams to my clarks oxfords yesterday at Kips n Kwik. Definitely drop by if you need some fuss free topying services. Even touched up my tip of my sole without me asking for it.

would my high instep be able to take the Simpson last?
IMO Simpson last is tricky. Its narrow and needs to be sized up by half from your usual sizing but some people might experience heel slip due to the size up. Instep for Simpson is not high. Better try it out yourself.
Vass is definitely suitable for high instep

The shoe now does have the shine that wasn't exist before. So for that I consider a good shine.

Aiyo...the shoe dosnt have the shine there before because you probably did not bother to shine it in the first place. What kind of shoe maintenance steps do you usually carry out on your pairs regularly?

I'll be honest, this kinda shine is nothing special, just wax coat + brush/cloth buff. Even a recruit in tekong can do better give or take 5-10mins.
