if they're already in powder form, chances are they're already stale.
just put them in a airtight container will do.

I sometimes will buy 1 packet of the vietnam coffee powder and prepare the drip coffee. But whole family only I drinking, is there any limit to how long the powder can keep in an air tight container?

Got discount. They always ask whether I am a member at the counter. Then the price is always less than $10.70 per sleeve.

Huh sure bo? Everytime they ask me, I ask back got discount is it? Then they said no. You must be super duper yandan/chio lor.

wow re-roasting beans technique.
does it 'recharge' the beans back to their original freshness?

My Taiwanese friend big on re roasting till it show a little oils and get coffee smell. I find it over roasting and always bring out bitterness, from what I read stale beans has that characteristic. But I sure feel it's a lot more punch of bitterness.
My Taiwanese pal claim it's supposed to be bitter cause it's fresh but I disagree

Starbucks beans in vacuum pack some say they are at least 6 to 9 mths stale, their expiration date also like mths laters.
So I say a good yr or so before decay kicks in lol

are you looking into home roasting now?
for the Quest m3, the local price seems pretty steep at 2k. I think if you get direct from Taiwan it'll be cheaper. quite a popular roaster over at HB. and it's the only home roaster with a tryer I think, which puts the experience very close to commercial roasting. tons of mods around too.
what do you think of the other roasters like the genecafe cb101(900sgd), hottop(1.8ksgd?) or even the behmor?
I've been looking hard at the genecafe tbh, cheap, easy to use, even roast. but the Quest m3 has been slowly poisoning me.

Not getting into roasting yet. I don't think good greens are easy to source and need alot of experimentation to gain experience and hence alot of wastage. I have tried using beans labelled for filter to make espresso and most of the time the taste is just weird. But do share if you do get into roasting!

Been home roasting over more than a year on my genecafe. Very good ... I source my greens from. Freshcafe at stirling rd.

U guys can checkout genecafe roaster if interested. I got it cheap and import one in from Korea

LOL

i actually view this as a very serious thread as I am also someone who have higher expectation when comes to food related items.

I am still very noob in coffee knowledge, so i need more clarification from u on what do u mean by "fresh".

mine definition is when i hold the beans to my nose, i smell nth.

when i do re-roasting, I heat up the 20cm saucepan, and it has to be very heated up, depends on the quality of the pan, cos mine is thick base, cast iron with a long handle. bring the pan away from the fire, drop 1.5 cups of beans -- measured with the cup i use for measuring rice. immediately, i start to do "flipping" like how chef flip the pasta! same speed as what u see in resturant kitchen, i do that over very low fire for 2-5 mins. when u start to smell the beans behaving like a coffee, remove from fire, and continue to flip away from fire but slower.

cannot place then in bowl cos i dun wan condensation to take place. my first time i did that condensation took place *head bang wall*
which is why say flip slowler and once the heat on beans cool enuff on ur fingers, place them on plate line w cloth or kitchen paper towel.

once i feel they are cool off, i will grind them up.

u ask me if i feel they are recharge, i did the same thing in sg and my current location --a very low humid place. surprisingly to me, both places, the coffe smell return again nicely. but i hv to say not as nice as fresh fresh rah. at least i dun get to grind stale beans and end up give me stale drink.
i personally FEEL it is back to ard 65-70% the last round i did it. cos the beans was out in the " open " for 8 months. I was way too busy during that period but i dun wan to waste my beans T_T. its original full robust is gone. but still can get the nice aroma from a drip/french press. taste wise, abit off but i can finish it, if i dun re-roast it, i will pour away the whole mug.

just becareful dun over roast it. if scare to flip, but wan to learn, can start learning on soya beans or white beans. if ur sense of smell not sensitive. u WILL burn the beans.

BUT pls do share the data with me if u try to do that. i wonder if there's anyone in this thread does the same as me; cos i read that u don't do that to artisan beans. my beans are just the proper cafe grade beans -- > better than starfurk grade

oh c'mon, you haven't even started and you're giving up? Dont read too much on those high lvl roast profiling stuff and overcomplicate yourself. Those ppl have got hundreds of roast under their belt and I'm pretty sure they start out with cheap gear and greens. Everyone's a noob once.
To me now, roasting beans is all about getting into first crack and second crack. Thats all. All the other variables like time and temperature can be mastered along the way when you've more roasts under your belt.

Here's a little sneak preview.

hey there, can you share more about your genecafe? Can you clearly hear the first/second cracks? Do you do back to back roasts? Do you cool your beans in the chamber or dump it out to a colander?

And lastly, which website do you got it from?:D

Was contemplating to roast myself as mentioned earlier.

After doing some calculation, there's no advantages at all to diy.
