Beginner here: If my espresso has no crema, the most likely suspect is that my grind is not fine enough right? Im using a cheapo espresso machine.

Actually most probably your beans are stale. What beans are you using and how many days past roast date?

If you using the original filter basket ( pressurized) should be able to create fake creama easily. If still no, maybe wrong grind size or stale coffee

I do it all the time. 7.5g dose, 20 secs, think around 25ml.

Guys, my espresso always tastes sour no matter if I under extract, over extract or extract normally (at least what i think is normal)

Sometimes my grinds are too fine and a get a brew ratio of 1:2 (14g dose to 28g output) in 50 seconds meaning its over extracted right? And it should taste bitter but its sour.

Sometimes my grinds are extracted well with a brew ratio of 1:2, same as before, 14g dose to 28g output in 30 seconds and it still tastes sour.

The beans I'm using is nuts and bolts from papa palhelta and but whatever beans i'd been using, all my espressos have this very sharp sour taste.

Anybody have any idea what the problem is?

Actually why will you think it's the grinder or machine's issue.
I think it's just the coffee.

The lighter the roast, the more sour it gets.
Find darker roast.

Avoid those that says there's any fruity or floral aroma.

Why not go to the nearest supermarket, buy a small pack of Lavazza and try if it's closer to what you want and is the sour notes still bright.

I don't think its the grinder or machine's issue, i think its a preparation issue on my part.

Ive tried 5-6 bags of coffee from cafes like nylon, papa and they all brew sour and taste kinda similar, all having that sour sharp note

Bro those roasters you mentioned are mostly making sour tasting coffee with lighter roast.
It's the same as I have it at their cafe with their expensive equipment.

It's the fruity expression they want to make and getting sour will be part of the result.

agree to certain extend -
so long as not sour up front to max is actually acceptable especially if you went for single origins. based on personal preference, if sour, adjust grinder to finer settings or/and dose larger amounts of grind into the basket. tamping might not be hard enough as well causing underextraction thus the sour taste.

else, go for espresso blends like four chairs from nylon with more nut and chocolate tastes that generally go well with milk. it shouldnt go wrong and seems quite forgiving compared to single origins on what i have.

!! left out this:
if the taste if off, you might need back flushing or at least wash the group head if your machine can do it.

I do clean and back flush the group head pretty often. The cup I feel is pretty sour but I usually drink with milk. However I want to drink without milk but it's just too sour. Wouldn't making finer or tamping harder make my shot timing be too long? If I do that I'll probably get a brew ratio of 2:1 at about 40-50 seconds. It's okay?

I've tried nylon and nuts and bolt and they're supposedly more nutty and balanced but it's still sour

Hi there, for the M3, the cheapest will be getting it direct from the manufacturer in Taiwan. It's about 1.6k+ sgd all in.
As for greens, once your roaster is on the way here, you can pm me for more info.

Try this, grind finer and down dose to 12-13gm. Keep the ratio the same. Lighter roasts are harder to pull right and it might help to do a little WDT if you're not doing it already.
