Quite a few cynics here too I feel. But we're all entitled to our own opinions and luckily most are based on user experiences.
The most important thing is just trust your own tastes buds!

Should be all the trials and testing of the right size jug to match with the machine's steam capability, think he use the first jug as it has a rounder and wider body for the milk to just sit there and swirl. And then he pour into the jug with sprout for the art. The jug is at least 600-800ml size, should take double the time to do our standard 200-400mls jug.

But who knows since with the boiler that size dont even need that long, maybe the milk is burnt!

He uses a knob for the steam wand, and could easily adjust the steam power. He probably already calibrated the position of the wand and the steam power beforehand. Also, the milk is steamed with very thick foam, you can hear air being introduced throughout. Since the foam is very thick, you'll notice he only do art like tulips and not rosettas, which require a much thinner foam.

Can also use a 1 hole tip or 2 hole with a toothpick stuck inside to reduce the steam power. Can also adjust the pressure stat of the boiler to produce less power in the steam esp if its a dual boiler machine.

The slayer 1 group machine is finally available! direct plumb only and around 13k AUD if i'm not wrong. Quite a beauty but a glass touchscreen looks fragile.

Yes it gives the barista a lot of options. Brew pressure AND flow rate can is apparently adjustable though i'm not really sure how these two relate to each other. Comes with some sort of auto mode too to do a preset infusion if you are in a rush.

I supposed a skilled lever user can do a limited set of pressure profiling too.

Unfortunately not much consensus on how pressure profiling affects the taste and mouthfeel. I feel these is another area for much exploration for the espresso geeks.

As for flow rate, i think any manual espresso machines can control from the grinding and dosage.

Sometimes I think having too much parameter is play is a PITA.

Last time got play some Design of Experiment project before. Say got 5 parameters, we check which is SIGNIFICANT, i.e slight variation then will have a lot of changes, then we play those 2 or 3 parameters enough liao.

Enough of theory hehe. Just my 2cts.

Yup agreed. Can be a big head ache especially when nobody is really sure how would the parameters affect the coffee. Maybe different coffees react differently to different pressure profiles or changes made to pressure do not necessarily equate to linear changes in the cup.

But to an experienced barista or roaster who is very specific in trying to achieve what he wants in his drink and is willing to experiment carefully, variable pressure machines are like a flexible artisan tool.

non-assisted Lever machines can somewhat achieve this too but there are some limitations on the pressure profiles actually and it may not be as consistent. :s22:
