Hi all,

we are ordering some coffees from Mr Espresso (US) and Bodka Coffee Company (US) for a private event. If you need any coffee from these 2 companies, pm us latest by tomorrow so that we can include you in this shipment. Or if you need any coffee from Red Bird, you can pm us too.

In case, any of you is wondering I am leaning towards a HX machine, i enjoy drinking espresso shots any other day, while my girlfriend enjoys milk-based drinks. So which machine will be more suited for me?

ECM, Alex Duetto, Bezzera, VBM, Expobar, Rocket, Nuova Simonelli (any other options?)

another option would be fracino machines from Coffee in Place. You might want to contact them directly to see if they have a demo unit for fracino machines. They bring in the cremina too. Looks great but its a non-spring assist lever so i guess will take a bit more time to perfect a pour.

Been doing quite a bit of experimentation recently with a few different beans I have on hand now. Testing out taste differences between ristrettos and lungos. My ristrettos are usually 1.4 brew ratio while lungos go at 2-2.2 brew ratio.

The HG one is really a god send for easy dial in. Maybe its my imagination but it would seem that the HG one or large burr sets are very forgiving to technique. I can get perfect pours each time with stirring in the blind tumbler and a nutating tamp. Previously I stated that I just do a straight down tamp but i realised that this doesn't work consistently with all blends. Nutating seems to cut down the inconsistency and the pours look and taste fantastic. The pour also takes a longer time to blond.

Anyway back to the brew ratio experiment. It would seem that ristrettos really accentuate the cocoa and nutty kind of flavours in the espresso. The espressos taste like melted dark chocolate, with flower, woody and roasted aromas. Lungos on the other hand brings out more acidic flavours and some astringency and bitterness. With the hg one and my brewing routine now I managed to cut down on alot of the bitterness in the lungos as blonding seem to happen much later. Aroma wise they are about the same. So I guess if you like dark chocolate or nutty flavours in your espressos, try out a ristretto. For perhaps some touch of complexity and acidity in your drink can try out lungos.

Brew ratio were adjusted by adjusting the grind size. Shot time (30s from 1st drop in the cup), dosage (18g), temp (92 degress) all remained the same.


I tried out an indonesian blue batak from oriole today with a v60 brewed using matt pergers technique. While the brew is too thin with what I'm used to, the aroma is very unique! There is a certain smoky incense aroma to the coffee which I've never smelt before. THe coffee is not heavily roasted, City roast level I think. Try it out!

My routine with the HG One is confirm with WDT and nutating. If I do both then i dare say 100% of the time the shots are drinkable.
The problem with the HG One is that the grounds are too fluffy and the path when they exit the burrs (flowing down a conical funnel) isn't enough to properly incorporate the fines evenly throughout. Which is why WDT is essential I think, at least to me.

Yup thats true. The coarser grinds will be near the sides while the fines are concentrated in the middle. I tuned the HG one to brew with the v60 when grinding coarser grinds this uneven distribution is very prominent.

Do you stir the grinds in the blind tumbler? This is what I do and I found that when this is done no need for WDT as the grounds will be evenly distributed.

Nutating seems to be a redistribution technique rather than a tamping technique. Packs the grounds evenly before the final tamp is done.

Eh? Isn't WDT = stirring of grounds?
Btw I don't use the blind tumbler, I use a plastic cup if you remember my vid.

Ah ic. So i suppose our routine is very similar. With the blind tumbler the level of the grounds in the basket can be a little unbalanced, so I also shake and tap tap the porta filter to get the grounds to settle more level.

Hey guys,

up till now i am still deciding on my second espresso machine to replace the Delonghi EC820 that cannot really produce a nice cup of espresso.

In my previous post, i mentioned about getting a Bezzera or Expobar or Viebiemme (all HX equivalent).

I have already demo-ed the Domo Junior at Highlander Coffee as well as ECM Technika at ALMA Roaster. For a sub $3k (vibration pump models), the ECM clearly wins in terms of design and quality, not to mention, the rounded edges all over the machine. But taste-wise, i havent been able to differentiate the two machines.

Should i jump for the ECM Technika IV Profi or should i wait for FCC to open the showroom first and try out the Bezzera Mitica/Strega before making my decision.

Can any sexperts please advice? I have been clearing my Lego collection so i have a little bit more spending power.

Decaf means can drink at night liao?

from what I understand the decaf process will reduce the caffeine to a "reasonable" level...and not 100% no caffeine. So while the caffeine is reduced its not a sure fire guarantee won't affect.

I can sleep at night even after late night coffee but i'm pretty sure quality of sleep is not as good compared to no caffeine.

I tried the decaf just now. Body and taste is excellent. But aroma is definately lacking. Nutty and roasted notes is there but no flower or fruity notes. Pretty decent nonetheless esp for late night comfort drink.

I think I'm gonna go into home roasting.
My options are the Hottop(abt $1.6k) or Genecafe(abt $860).
Gonna contact Highlander soon to demo the Genecafe.
Any thoughts peeps?
