Spinelli roasts fresh in Singapore. usually their stuff is heavy roasted but quite decent.

Starbucks and coffeebean coffee is ancient stuff.
I see, never knew Spinelli is fresh roasted locally. Yup I do like their earthy and dark roasted stuff. But they manage the bitterness well so it's good for me. At least it's way better than my home Nespresso.

I ordered double macchiato at Starbucks and they gave me some sweetened frappe. My jaw dropped. :s13:

Look at Eureka Zenith 65E / NS MDX, they doesnt lose calibration even taking the top off as the adjustment is made by turn down the bottom burr instead
(Of course there sure are some tiny differences but much easier to dial in again)

MDF also the same there are many like so, I use such and I don't adjust most of the time

Spinelli is really one of the pioneers for fresh roasting espresso style coffee in Singapore. The other is highlander too. The trends seems to have caught on and more and more roasters are popping up. Recently i tried la ristretos at novena. bianco blend. Quite good to me. Balanced. Pulled on a kees van der westen spirit.

Singapore has so much roasters nowadays, look like a bubble.
Waiting for them to become competitive.

Any bro knows where to get cheap pour over kettles? The ones that are sold in cafes and coffee websites are all so over priced. I boil my water in an electric kettle and just transfer over for pouring, so i dont see the point in getting such an expensive "pouring device"

Just buy from Amazon.

It's not like machines need repairs or a service point locally.

How many roasters locally? It's not about quantity but quality.
With high prices out neighbors shop from Thailand or China

Hey... just started using my bezzera, like to ask for some idea on the weight of grounds you guys use for double basket.

I was trying 14 to 15g for dutch colony's dutch blend and 16 for raven from oriole. Overall quite ok, but still seem to miss the optimal taste by abit. Still trying to fine tune the grind size and amount of coffee to use.

Is 30 grams of espresso in 30 seconds a good gauge (where the taste is not significantly bitter or sour) ?

Congrats on your new buy!
My personal take - 14-15g dose on a 58mm stock basket works well for dark roasted coffee making a traditional italian espresso profile.

For lighter roasted 3rd wave stuff i use higher dosage and vst baskets. 20grams is my favourite.

30grams of espresso in 30secs with a 15g dose is about right. standard double espresso. 50% ratio.

You may prefer a ristretto or a lungo. so grind finer or coarser and keep the time at the same 30 secs and dose at the same 15g when adjusting. See latest barista hustle about using time. as a factor.
If you machine has preinfusion, you can try to pull longer. each second of preinfusion time counts as 1/2 a second of brew time.

Ristrettos - heavy body, more intense, tends to be more sour (although can get confused intensity with bitterness). 66% ratio

Lungos - thinner body, less intense, can be more bitter (Look for ashy notes). 33% ratio.

My personal favourite is ristretto ratios cos I prefer heavier bodied espresso, more intensity. With correct temps and slightly longer brew time I can cut on the sourness and bring out a good balance.

You can also play with temperature. This one is tricky and depends on the beans. For some light roast stuff you may need to go on a higher temp otherwise its really sour.
For dark roasted stuff low temps help to cut the roasty flavours.

This is all in general and i have encountered may exceptions depending on the coffee. dont' feel shy to ask the roaster what is his "espresso recipe" or "brew ratio". They will usually ask what kind of machine are you brewing from.

optimal is very subjective.
You drink neat or mix with milk?

You use two blends abit hard to fix cause once you think the setting is right on one, it may not work on the other blend .

I prefer bitter more than sour and medium roast coffee .
Normally 25 secs for 50cc total.

If the sour and bitter is balance actually it's pretty alright imo

I, on the other hand, is the opposite of what tiger does.
For light roasted beans, I use a lower dosage and pull a little longer. 1:2 ratio.
For darker beans, higher dosage and pull ristrettos.

There's no right or wrong way. Your own palate decides the recipe.

How hot should the hot water coming out from the grouphead be to be ready for brewing?

The highest temperature i got after temperature surfing on my silvia was only slightly less than 80C measured by my milk thermometer.

Can I know at what temperature does your machine shoot out hot water from the grouphead to an empty cup so that i can compare?

Thanks guys! Of course there is no right or wrong, alot are personal preference and palate also has their own different perception. I am asking so I could try and know more. Without trying more options, won't know what you love best!

@ tiger, really informative. Thanks!

@ tester, I only consume with milk variations. Still don't know how to appreciate espresso. But what do you mean by 25s for 50cc total? Total includes?

@ chiky, will try your way too!

I just did this. Used a syrofoam cup with an electric thermometer. run my group for 20 secs to completely full the cup. Electric thermometer was in the cup. Highest temp reached is 80c.

My PID is set at 93c

Hard to make an apples to apples comparison as our method may be different.

Are you still having problems with sourish coffee?

I know my temps are accurate cos when I set my PID to 99c there is no flash boiling at the group. When I set to 101c I will see flash boiling at the group.
