If you can do without Samsung Specific apps like the Notes, keyboard, gallery etc, then V3 is a pretty good stand in. I have both currently and I've switched my daily driver to V3 just because of the bigger outer screen.

Guyz, i am currently using Samsung Fold 6 and this V3 actually attracts me in terms of the screen size and some of the features.

1. is it a good idea for me to jump from fold 6 to V3?
2. Is the OS stable and apps are stable?
3. Is there any cons for this V3 as compare to Fold 6?

I suggest if can wait abit wait for oppo fold n5 first and see. Likely announcing this month.

I don't use the notes. Am using the samsung keyboard.. gallery wise , only use for sorting out photos into folders n maybe sometimes add text onto photo etc...
By the way V3 able to use NFC?

Yes, NFC with Google Pay, Wallet and transport also works.

The tracking/blocking only works for the sites loaded on the browser, it can't help with apps.

Mine isn't so. I'm able to move the gallery and settings icon anywhere or place them in any folder. Maybe try clearing the cache of your Honor Home.
