Not true. 独孤九剑 can be beaten. 独孤九剑 is very powerful and can be considered as unbeatable because of 2 reasons

1) Very fast attacking strokes. So fast that the enemy has no time to strike back but just defend.
2) The enemy’s kung fu skills have strokes (招式). Once the kung fu skills have strokes it will be defeated by 独孤九剑

The followings

1) Ah Ching – A girl whose sword skills was taught by a white ape. So, she has no strokes. Her sword skills were so fast that it defeated 3000 soldiers in a short time.
2) 六脉神剑 – Uses internal qi energy exiting through fingers. It similarly has no strokes. Just point fingers can liao

In 天龙八部 萧峰 already mentioned that if 段誉 learns the skill properly he, 萧峰, would have been defeated

These can be easily defeated by 独孤九剑 by using the followings

2. 破剑式：专门用以破解普天下各门各派的剑法。天下剑法众多，但在破剑式的拆解下，都能找到其破绽并加以击破。无论是凌厉的快剑，还是沉稳的重剑，只要是剑法，都在其破解范围之内。

You noticed that in 天龙八部 there’s no fight involving 六脉神剑 in the rain because the movie never shows such a scene.

In a normal fight with no rain 独孤求败 would have lost the fight because he cannot see the qi energy coming at him. But if there’s rain, he can see the qi water streak coming at him and can easily evade the qi energy. In this later fight 六脉神剑 would lose to 独孤九剑.

Lastly, Ah Ching vs 独孤九剑 – Who wins?

Both their skills are very fast and deadly. Best is Ah Ching's sword skills were taught by a white ape with no strokes. And, there's no mention anywhere that 独孤九剑 easily defeats 3000 enemies in a short time.

There's a lot of other ranged attacks that actually cannot be seen，劈空章，一阳指，火焰刀，降龙十八掌，扫地僧，参合指，etc even though the dramas will CGI something visual,

I think he was attacked by the Tufan monk and Murong Fu. Even if he don't kill he also need to neutralize the enemies' attacks by counter attacking. Dgjj by itself only focuses on offense 100% to overwhelm the enemy, it has no defense.

If the enemy is super overpowered with speed like dfbb, there’s not much the user can do with the skillset.

Actually, there's another fast and deadly attacking sword skills, 僻邪剑法, comparable to 独孤九剑. Initially, 独孤九剑 could not defeat 僻邪剑法 but later the weakness of 僻邪剑法 was exposed because after certain number of 僻邪剑法 strokes they tend to repeat. So it was defeated by 独孤九剑 because the 僻邪剑法 strokes cannot be unlimited
