There’s a few UniFi 2.5G POE+ switches. But yes, it’s needed for the 6E APs as the UDM Pro does not have POE+. I’m not sure if POE+ injector would work as it may limit the transmission to 1G.

One practical consideration to note (other than pricing) is whether to go for fan or fanless (silent cooling) switches due to the noise.
Fanless and affordable (just for 6E AP) would be USW-Enterprise-8-PoE and optionally add a (Layer 2*) USW-Aggregation if more 10G ports is needed.

ONT > Gateway/Router (UDM Pro) > (using LAN SFP+) USW-Enterprise-8-PoE

I get ~ 1.6Gbps both ways on a single client

So proportionally, a bit more than twice (700Mbps*2) as fast on 2.5Gbps.

Not so sure if Netgate 8200 can do it or you need Netgate 1537/1541.

Here is the Speed test i did.
- Laptop 2018 | with upgraded intel AX210 wifi Card 6E
- Unifi AP U6 Enterprise
- Unifi USW 8 PoE+ Switch 2.5G Lan with 10G uplink
- MyRepublic 10G Fiber connection via Unifi DreamWall

Previously when I was running SI 10gb, I had a pfsense with sfp+ port. I had a 10gb switch which my 4 Asus AX89X is connected via their sfp+ port that formed my 10gb wifi mesh.
