Braised Chicken Feet, Hock Tendon & Dried Mushroom. I added the collagen block from the previous braised.

The chicken feet took me 2 days to prepare. I was trying to test out a recipe from youtube, it was a recipe for making hk dimsum 风爪.

First you soaked the chicken feet with a mixture of baking soda & water for 6 hours!

Then blanch it ,fried it,soak it in water. That not all!

You got to soak it again in the mixture(baking soda+water) for 2 hours and lastly soak it in vinegar for 5 minutes.

I used two types of hock tendon, one is pre-fried? The other one in raw form.

The spring onion that I bought comes with the flower,usually i will discard it because it is too tough.Recently I kept them to make the braised. Less food wastage!

Slow braised for 2 hours on gas stove. Pressure cooker save time & energy but result not as good.

smoked duck pasta with red, yellow & green bell peppers, shiitake & enoki mushrooms.

threw leftover bacon and bratwurst in there too...

Had Raclette while on a biz trip in Geneva and wanted to replicate at home for my wife. So here is the attempt:



More info here on blog if you are interested but basically buy raclette cheese, melt over boiled new potatoes and eat with charcuterie, pickled gherkins and pearl onions.

Hi i'm going on a vegeterian lunch diet for a few months and i'm wondering if thousand island sauce or coleslaw used in my vege salad are fattening and high in cholesterol?

Pardon me for my noob question as i know nuts about nutrition :(
