Braised Chicken Feet, Hock Tendon & Dried Mushroom. I added the collagen block from the previous braised.
The chicken feet took me 2 days to prepare. I was trying to test out a recipe from youtube, it was a recipe for making hk dimsum 风爪.
First you soaked the chicken feet with a mixture of baking soda & water for 6 hours!
Then blanch it ,fried it,soak it in water. That not all!
You got to soak it again in the mixture(baking soda+water) for 2 hours and lastly soak it in vinegar for 5 minutes.
I used two types of hock tendon, one is pre-fried? The other one in raw form.
The spring onion that I bought comes with the flower,usually i will discard it because it is too tough.Recently I kept them to make the braised. Less food wastage!
