If still new to Malacca, and you are not on tight budget and not short of time, suggest you take a 2 day trip NOT over the weekend. You will save a lot of time from queing at customs/immigration on weekdays. The go-to place for new visitors is Jonker.for one day trip malacca, morning go evening come back...any good place to sight see?
Personally to me, all the hype about the weekend Jonker night market is nothing much. You can get just about the same stuff during the "day time market" except perhaps without the steet stalls and live street performances but under the scorching day time heat. Bring umbrella. Stay at a hotel within walking distance from Jonker. From there, you should be able to do the historic sight seeing on foot from there. Food-wise, you should get to experience most of the Malacca local food at Jonker there though at tourist price; or you can venture on foot to other local eateries just outside Jonker area. Since you are renting car and if in adventurous mood, can drive around to hunt down the more interesting eatery places.
BTW, there are also tour bus coaches from Singapore (at convenient pickup points) that drops you off at hotels in Malacca. You can consider that if you are not going to drive around in Malacca.
