any recommendation which hotel to stay?

Depends on the type of hotel you like.

My personal choice: Casa del Rio, The Majestic, Hatten, Equatorial... one more newer one somewhere on the right of Hatten, forgot the name.

The Hatten area has malls. Stay in the older part of town. Consider the Aldy Hotel.

I am now at straits hotel. Spent around 800rm for Two suites for two nights. Any money changer in Malacca recommended?

When I was in Melaka and around the tourist/shopping areas, I'd just head for the (Maybank) ATM whenever I needed cash. Bank rates then were better than money changers' over in the malls, not sure about now.

What time does the eateries at jonker closes during weekdays?

There used to be a joint that opens very late at night, but not sure if it's still in operation. There's also a 7-Eleven there.

Five minutes' walk away, there's a "foodcourt", actually a corner kopitiam that opens till quite late... but closes once a week (I think) maybe Tuesday. To get to the "foodcourt" from Jonker, you'll have to walk along the road in front of the Casa del Rio Hotel. Ask people in the area if you're not sure.

If I am there during weekdays does it make sense to stay hatten side rather than jonker since the shops closes early?

For going back from Malacca to SG by bus, is there any bus company I should avoid taking?
