Ah...your sperrys,
yes, you can apply mink oil on them if you want. Mink oil is universal for all leather goods, EXCEPT for nubuck and suede. But come to think about it, there is no harm on 'hairy' leathers too, just turn darker and may not lighten back to original colour.
Try not to use silicon or petroleum based conditioners, read the ingredients before use.
On personal note, I'd rather not use any conditioners on sperrys at all, esp your oatmeal. IMO, they look awesome in 'battered' and 'seasoned'. That's just me
