I just to find out how do you usually store unopened wines without a wine chiller?

u should consume most wines that are commercially available within 24 hours. if u can't finish it, just drink it the next day. most of the entry level and even some mid level stuff will fall apart within 24 hours.

I put mine in fridge, let it climb back to proper temperature the next day before consumption, but the taste is a bit different.

it will always be different. we have to understand that wine is dynamic and it changes all the time whether it is still unopened or opened (which expedites the process). wine constantly evolves so what u tasted a couple of hours ago will most likely be different. it may be better or worse.

My recommendation for novice drinkers... white zinfandel from Sutter Home/Beringer, can get from Cold storage.
Serve it chilled, its light fruity & crisp.

Some of you may remember that I started a Wine Club @ Kolam Ayer CC. We will be inviting a Certified Specialist of Wine (CSW) to conduct a sharing session for you!

Contents will include:
1) Introduction to major aroma and taste components in different styles of wine
2) Wine etiquette (ordering wine in restaurants, wine appreciation etc.)

Session details:
Date: 6 Mar 2010 Saturday
Time: 3pm
Venue: A wine tasting room in Boat Quay (will provide more details once attendance confirmed)
Wines: A sparkling, a white, a red, a dessert and a fortified wine! (if we have enough participants)
Cost: $25 per pax

This sharing session will be a casual one which will be great for wine newbies and enthusiasts! Just just drink, learn and be merry. But if anyone is interested to know in-depth about the world of wine, the wine club will organise more technical workshops in the future.

Please pm me your attendance by 19 Feb 2010. Thank you!

Hi ikileo,
Wines will be from Australia and Chile, not high-end premium French but definitely not supermarket wines. I am still trying to convince a member to contribute a Swiss dessert wine, which quite difficult to get in Singapore. We will also provide cheese platters for the participants to clear their palatte.

A summary of what you will get for $25:
- Wines of 5 different styles, including a Swiss dessert wine
- Conducted in a cosy wine tasting room in Boat Quay
- Certified wine specialist to share his knowledge
- Cheese platters as refreshments

If you do have contacts of any wine place or event organisers who can provide the above for $25 or less, do share with me so that I will work something out for the next event. Thanks.

Beta_tester,
Thank you for your interest. It be will around an hour. But feel free to chill out there and chat with the speaker.

refreshed!
came back last week from montreal and chicago...lots of wine drinking there 'cos the prices were so much better!

on another note, the WORLD GOURMET SUMMIT has just started in SG and there's a big wine event this sunday (18th apr) at hilton hotel. Pay $58 and get to taste 200 wines from top producers from all over the world. a very good deal IMO.

I went to last years event and the theme was on italian chiantis, but this year they're showcasing the global wine scene. do check it out.

FYI, i am in no way affiliated to the WGS or its organizers/sponsors.

DRINK UP!

My most recent post is on a great value Bordeaux wine that can drink now (provided you decant it for a while first) or if you want to store it properly for the next 2-4 years if u want to be rewarded even more!
