Hi ikileo, can I ask what are the white wine that are suitable for cooking? Especially if a 7-8 year old may be consuming the dishes. Thank you in advance for your advice :)

will the white wine only go into the vongole?

either way, u can use any table white wine. after it has gone through the heating process you won't be able to taste the subtleties of each wine so it's no point splurging on an expensive bottle of wine when you are cooking.

as for vongole, being a traditional dish from Naples in the Campania region, you can use wines from Campania such as Greco di Tufo or Falanghina. But i know these aren't as common in local SG supermarkets so for italian dishes i usually grab an affordable white wine like a Soave. This is found in pretty much any cold storage.

but if you don't really care about whether the wine is 'italian' or not, you can use a semillon/sauvignon blanc blend from aussie.



but for a young child, if your concern is alcohol, you'd have to see the cooking time. Assuming you use a bottle of wine for cooking, with an average o 13% alcohol; 750ml of wine contains 97.5ml of alcohol. Under heat the alcohol will break down but it's not as quickly as you'd think.

but within 15-30 minutes of cooking, the residual amount of alcohol will drop to about 35% which leaves 29.25ml of alcohol. Assuming you are of a family of 3-4 persons, that will be about 7.4ml - 9.7ml of residual alcohol in your dish upon serving. The amount will continue to slowly drop as it sits in the hot dish.

if u wish to reduce the amount of alcohol further, a total cooking time of 2.5 hours (braising/simmering etc) will knock it down to 5% residual alcohol.

while alcohol is never recommended for a child, in this case an average 8ml of alcohol won't do much.

if u want to remove alcohol entirely you can use a mixture of white wine vinegar and dilute white grape juice.

i can't see the producer name.

Valpolicella is the region name.
Ripasso is the style of making wine with dried grapes.
I assume the gold letters on the bottom right of the first picture could be the producer name but i can't see it clearly.

Have you tried it?

Btw, I have tried the wine already in 2 occasions. One with just the wine and alone and the next day with carbonarra pasta with ham and bacon.

I liked the wine alot! Perhaps because I am a convert from the heavy bodied Shiraz to the lighter Pinot Noir, this wine has very similar characteristics to the latter.

When it first enters the mouth, the feel of the wine is almost like that of drinking water --> very light in tannins and easy to drink. It runs very smoothly down the throat too. In terms of taste, it has a pronounced plummy and fruity taste and if you decant it further, it gets even better. And surprisingly, it pairs quite well with the carbonarra I cooked :p

Overall a very pleasant wine that is very affordable. Going to get another bottle to cellar it.

Dear all advocates here

I am going to relocate ...and leave Sing. about mid Nov 2011. I have a wine fridge (Brandt CB1780 : 173 btl capacity) I got it 24th/Dec 2008.
Not sure if I will bring it with me now but try to see if anyone having any interest ...

This will be an affordable french dinner with french wine at Saveur (more info on their website). Let me know your budget and see if I can ask them to customize a nice set meal which we can enjoy with our wines. We will each bring a French wine (red/white/sparkling/sweet etc...) but the minimum value of each standard bottle of wine should be more than $30 (so that no one gets away with crap wine).

I would suggest that whichever wines you bring, we can taste them blind so we don't know what they are. So do let me know who is interested and what coloured wine you will be bringing. if you dunno what to buy, you can tikam tikam buy something more than $30 and see how it goes ;)

don't limit yourself to just bordeaux. There is a world of french wines that is worth exploring. Here are some retailers you can look at for some interesting french wines: Carrefour, Le Benaton, Isetan Supermarket, ewineasia.com, cafe-calva.com.sg, Grand Vin...just to name a few.

If possible, please try to bring along a +1, so that 5 people won't have to finish 5 wines by themselves.

Drinkers of all experience levels are welcome. Take this opportunity to learn more about wine!

bring any glass you like. i'll be bringing my stemless. (for those who don't have a stemless, you can get one at Ikea at $4.90. Very useful and convenient.

I got the Stemless, just itchy to bring those with stem to test the taste..

@swirl84: the glasses at ikea are sufficient and moderately priced. It should be fine. it's good to own a glass for your own so you can enjoy your wines at home or even on the go!:s12:

on friday i will list out again what you guys bought and the $$ that you can pass me on sat :)

vineyards specifically or individual producers?

'cos the interesting thing about Germany vineyards is that the plot of land can belong to several producers who divide up the vineyards.
