You need to stir the peanut oil so that it blends & mixes well with the peanut paste otherwise the peanut butter is going to be very dry and hard.

And why in the world do you need to cut down on oils?

I also pour some of the oil away. Personal preference. I like to eat it drier, like blocks of peanut paste.
