Transcoding BD hits the FPU pretty hard so... I may or may not be okay with 3700X/3800X

I think you forgot Intel did release 4 cores Kaby Lake-X 2 years ago...And once again, AMD is making the same mistake of creating products that overlap with its various market segments.
With the mainstream Ryzen going up to 12 or more cores, there's essentially no incentive for a HEDT builder to go with Threadripper unless he or she is targeting the extreme segment. Which means that AMD has no choice but to raise the minimum core count on future Threadrippers to at least16 cores with stock clock speeds of at least 3.5Ghz to 3.8GHz to avoid cannibalization from Ryzen.
The fact that both mainstream Ryzen and professional Threadripper accept ECC memory is another blunder. Who would go for Threadripper if they can get the same benefits from a Ryzen?
For better or for worse, Intel never allowed their mainstream, HEDT, professional workstation and server processors to overlap each other in features. The mainstream i3s to i7s never exceeded 8 cores, and the HEDT Extreme series never allowed ECC memory usage.

I do feel that the 3800X may be one of the least desired chip in the stack considering that the 3700X is similar in specs and can potentially catch up with the 3800X with some overclocking. I feel most will either go for 3700X or jump straight to 3900X if they prefer the fastest chip.

Threadripper is more than just the extra cores. 64 PCI-E lanes and quad-channel is a huge step up for content producers, especially with the PCI-E M.2 riser cards.
There is a clear differentiation between enthusiast/gaming chips and the TR HEDT systems, and if you think it's just core count then you're not someone who needs/knows HEDT
