Questions

1) How to practise the process of dosing the coffee to the porta filter, knocking , tamping etc ?
2) Since I'm using fresh coffee, can I buy from cold storage those coffee beans for practise? I'm using coffee from oriole, a bit ex for practise? $17 per 250gm
3) When to stop the pulling if it's good and if it's bad?
4) What does a perfect espresso taste like? Sour ? Bitter ? <-- this one kang kor

Try a finer grind and tamp it well. Extraction will take a little longer but you will find it more full-bodied. How old are your beans:s11: crema seems to be missing

Do NOT knock the portafilter after tamping.

So I need make an even finer grind?

Beans are approx a week old I think

1) Machine : Silvia v3 with PID
2) Grinder : hario Slim chiamseetong ( from closed, open 3 clicks )
Is my fine-ness ok?

** Will probably order a Macap soon **

3) Coffee used : 1 scoop swept flat using the aeropress scoop
4) Knocked once before tamping

Under extraction.

The possibilities are quite wide.
Grinder's fineness, machine's pressure, coffee not fresh, etc.

1)How much is the machine with PID mod?

2)could be not fine enough, or other reasons calbay mentioned

3)1 aeropress scoop is abt 14gm. Just enough for a double basket.

4)doesn't matter. just keep doing the same thing for now.


From the video, you pulled 2oz(60gm) of espresso using abt 14gm of coffee in 30s. Very watery throughout the shot suggested underextraction as calbay had mentioned.

Solution:

try to aim for 1oz(30gm) of espresso in under 30s.
grind finer if you can
use more coffee. try 1 and a half aeropress scoop of coffee.
when extracting, the thickness of the liquid should look like honey flowing out, not water-like.


30gm in under 30s is just a guideline. don't take it too seriously. once you're in that area, you can now adjust accordingly to taste.

too sour? grind finer and/or use less coffee
too bitter? grind coarser and/or use more coffee

Don't know how a good espresso is suppose to taste like? time to go out and pay $4-$5 for a shot at good cafes here.

2) 1 step coarser than then the previous video
3) Pull time I think about 40s

Sorry still newbie here.

Today should I try one step finer than first video? 1 scoop of aeropress coffee?
Or get macap then talk?

Tamping technique I would try this

Finer abit, coffee reduced to 1 scoop ( so that volume wise it's more repeatable since I don't have a weighing machine ).

pull is 27s for 30ml
Not sure why crema still not there.

I think you wasted money on your handheld grinder.

As i mentioned somewhere before.
Get an auto doserless timer grinder straight and that solves half your problems.


As for coffee, go find something with 20% robusta
