One of my decent rosetta. This one really taiko one. Couldn't replicate another after this.

Try drawing a "S", wider and faster. Try using a pen on a piece of paper, it's the same motion if you're going to pour a rosetta. There are many variations/looks to a rosseta but the motion is agar agar about the same. And when you cut at the end try not to go very high, otherwise you'll suck in the centre too much and you get leaves which look like weed.

thx for the tip. I guess I'm trying to learn too much too fast. I'm taking it slow now.
Master the 'heart' 1st, then the 'tulip', and lastly the 'rosetta'

How to best use this?

Don't know how they do it.

Anyway the coffee is sour, sour even with milk with a cappuccino!
Maybe is the milk sour.

Maybe is the milk sour.

Are they still using the synesso? Proof that no matter how good the machine, no point if beans are poor quality, roast not optimiZed or machines not dialed properly for the beans.

It's still very unusual that a cappuccino is sour consider milk is an alkaline.
Never tasted a sour cappuccino before.

My friend's espresso crema was just so so, the machine is the least deciding point anyway. I took a sip, quite flat.

I saw their handle all spoilt liao, it's made of cheap plastic.
Super lousy.

I think they wasted their money on the machine.

My friend and i confirm that i make at home also taste better.=:p

Synesso and Slayer, are really a waste of money.
Heavily marketed items with nothing concrete to prove they are better. I used to use them and i don't really appreciate the results. Very hard to play, counter productive imo.
What it claims to do, imo is over rated and insignificant.

If i make a cup from a Synesso and a normal machine say those traditional E61 machines. From the same bean.
I can guarantee 80-90% will prefer the result from the E61.

What they claim to make better is debatable but i know it's not to the liking to most Asians.

Most cafe owners bought those expensive American brands by reading reviews from Americans.
Particularly in SG, those cafe owners are newbies entrepreneurs with limited experience. Had not tested coffee machines in the market extensive enough. They bought whichever they heard is better.

There are so many better machines in the market. Some are very good for newbies like them to bring consistency and speed.

Sometimes i see how they use the machines, i can have a heart attack. They are really slow and inefficient.

Milk is slightly acidic not alkaline. But anyway....So so crema....sour coffee.....could be under extraction due to low temp, too much grounds...overly light roast...stale coffee....

Milk sour could be due to RESTEAMing left over milk left standing when there were no customers. Ive caught many baristas doing this filthy practice!

When I buy from a cafe (which is rare) i will stand at the counter and STARE at the barista's routine to make him more self-conscious. 4 bucks for a drink I can finish in 10 secs better be worth it.

Most commercial class machines are all very good and consistent and there is very little taste difference between them. However some synesso and if i'm not wrong some LM stradaas well has some extra features for the adventurous cafe to experiment and some flexbility like separate pressure profiling between groupheads and separate boilers and temp for each grouphead compared to other machines. very useful when you are serving different blends at one time. Saturated groupheads and additional or larger boilers for each grouphead are the main culprits to the increased cost of such machines. High end commercial machines are a very useful barista tool...if the barista knows how to use it...

Even when i first started to using a lever machine and add milk to esspresso it never taste sour and somemore mine is 2 double shot as i like strong latte with a little bitterness
