点都德 kinda bland. Only the 红腸 is nice. I was abit disappointed (especially with the char siew bao, skin too thick, flavour too light) considering we waited an hour IIRC for a table.

The mass-market options like eatery chains will work out for you then unless you want to venture to specialty shops that offer good Cantonese double-boiled soups炖汤, desserts 糖水 and claypot rice 煲仔饭.

陈添记(roadside place) in Guangzhou. Never been to Shantou, so never had the opportunity to try the beef hotpot.

Yes, it is for soup. It is still a chain, so it is like going to Crystal Jade. I have had really good soup at old, rundown shops in non-tourist neighbourhoods, but I can't make out their addresses.
