Used to eat at the malls. Nowadays I don't patronize unless my friends want to be there. Prefer to save my money and eat at hawker centres. The most expensive meal I've eaten is A5 Omi beef sirloin in SG that cost more than $250. Magosaburou at ION is also not bad, pricey but we managed to get the staff to grill for us. $400+ for two.
Like what others said, it's a totally different experience and standard if you compared to the chains in SG. Likewise for those local Japanese foods. If you did see Japanese in SG kitchens, then yes, I'll try.
Japan Town in Wisma has just opened, and I hope to try those when the Japanese are still manning the kitchens.
I do my research based on the ranking and reviews in Tabelog, Japanese blogs and forums. We didn't eat expensive meals in all our trips. If there were to be a need to splurge ¥30,000 per pax, we would be more than willing to get a great meal. Only managed to visit Tokami for dinner since many were closed during GW, hope to try others for future trips! That being said, we do not have pockets deeper than AHSS!
If you wanted something not too expensive, can try Tamahide 玉ひで at Ningyocho for lunch - creator of Oyako-don which uses Cochin chicken; Anago-tendon (anago tempura set) at Tenfusa 天房 along the stretch for Sushi Dai & Daiwa Sushi. Both cost below ¥2,000 each. Generally visited by locals. Be prepared to queue at Tamahide. As for Tenfusa, if you're there before 10am, you should be able to do a walk-in.
