Hmmm...can i ask those pros here? Does the bean grinding process really affect much of the overall taste of the coffee?

YES, always use freshly ground beans, pregrinding is a real waste of beans. The size and type of burr, the consistency of the grind and how much heat (related to how fast the burrs spin as well as the size) is produced affects the taste of the coffee. As mentioned by some people here already, the grinder is actually more important than the machine. No point skimping on one. If you palate is good enough you probably can pick up the changes in taste as well!

what machine are you using?

I'm using a Rocket Evoluzione V2 and a Mazzer Mini! My machine is in Melbourne because that's where I'm based most of the time. That was where and why I first got into coffee, the stuff they do here is crazyyyyy (go look at Matt Perger's performance for the World Barista Championships 2013, totally not what you would expect and breaking all the rules, was fortunate enough to be able to attend the event).

For pourovers I like my V60 simply because it's easy to use, otherwise I'll be using the Chemex (you get really clean flavours cause of the filter), I have an Aeropress but I don't really use it.

BTW, anyone got any recommendation for a cheap and good expresso machine? I dun wan to make those fancy prepacked crap. I just want good ol' black expresso so that I can combo my own Mocha Latte ice blended.

Bro, since my Silvia is foc didn't really read much about espresso machine.
Just use this is OK? Then focus on the grinder only?

i would advise you to start reading every single review on every grinder. search on youtube too. then decide what you need on a grinder and which grinder suits your needs.

Like me for example, what I'm looking for in a grinder is one with big conical burrs, low grinding speed and minimal grind retention. And I've narrowed it down to the HG One. That's the target I'm working towards now.

Type E, I think they discontinued the doser model (or was it the Type A/B, can't remember). I think you mentioned you prefer the doser because of the fact that it creates less mess? I think it's negated by the fact that you have an extra part to clean anyway? I just vacuum all my mess away at the end of the day if there are grinds everywhere.

Usually if I intend on pulling shots the machine would have been up for about an hour or so at least. I usually flush for about 5-10 seconds until the water is not "hissing" anymore due to the superheated water (just looking at the shower screen and listening for the noise). Then I go about cleaning the tray (wiping it down), getting my cups ready and grinding/tamping then pull a shot.

Inbetween shots I don't do any cooling flushes per se, only just to clean the group head. And it's usually not for very long so temperature doesn't drop that much. If I haven't pulled a shot in 5-10 minutes I'll flush for longer.

TBH it's not really a fixed routine, I just make sure that it's not superheated when I do pull a shot by just watching the way the water comes out of the grouphead when I flush before I start grinding. I could probably watch the temperature with a thermometer mod but it's not one of my biggest concerns actually. Haha.

ok, the reason why i prefer dosers is cuz you can minimize grind retention more than doserless, and other than the fact that doserless throw grinds around. You'd think they'll fall nicely down to your portafilter but no. Mine sometimes spits out grinds and throwing them mostly to the left, making a mess everywhere.

Doserless grinders usually have a chute at an angle coming down to the portafilter right? Most grinds are stuck at the area after exiting the burrs and b4 coming down the chute. How to get to the remaining grinds there? You knock/shake the grinder around, hoping they'll come loose and fall down the chute. Or you take an angled piece of stick, stick it up the chute to claw down those grinds.

Now what abt dosers? You take off the doser cover, remove the finger guard and voila! The area where all the grinds are stucked is right there in plain sight! You simply take a small brush, sweep the grinds down to the doser chamber and dose them out clean!

Anyone knows where I can get a good supplier of green coffee beans if I want to do my own roasting. Seems hard to find those exotic types like Geisha or peaberry beans or even single estate coffees.

Oh and TS you made an excellent purchase. I also use a VBM but the larger double boiler version. Did a lot of research before committing to the VBM machine. VBM does a lot of testing of their prototypes for temperature stability, reliability and most importantly shot to shot repeatability before coming up with their final product. Of course can't beat those machine from synesso or la marzocco with their saturated group heads. But that would be treading into commercial class machines already. Too ex…

for home usage, you must always measure the beans 1st b4 grinding and dose out the grinds clean for each shot so no oxidisation can occur.

I get where you're coming from about grind retention! I can theoretically get all of the grinds out of mine (I already removed the finger guard from the chamber and I can see the chute and get all the grinds out.

The thing is, if I actually do get all the grinds out, it actually disrupts the way the wire works (it slows down the flow by "accumulating" a bunch of grinds on the left hand side and freshly ground coffee comes out the right hand upside down "L"). I can remove the netting but I will lose the anti-static and clumping will occur as the grinds will stick to the chamber.

The grinds, despite coming out of the chute 90 degrees to the chamber exit actually fall down quite nicely on the centre of my basket, the main spillage is due to either overfilling or when I am distributing.

As a result I end up wasting more grounds trying to purge the old stuff (2-3g) in the chute. So you're right on that point about retention!

But if I'm not changing any settings and I'm not fussed about the grounds that are a few minutes old, I just grind as usual if I'm doing a few shots in succession as the amount/weight of the actual grind coming through is the same if you think about it (I measured it before to be sure haha).

Looks good! But I can't imagine myself using my hands all the time. =:p

Check out the EK43, it's the "in" grinder nowadays, especially after Matt Perger used one at WBC 2013. Liberty Coffee just got one!
