Take it to the extreme: you can eat a high fat meal and spike up your LDL immediately, but why no heart attack immediately after the meal? Especially teenager and children too.
if body is metabolizing glucose for energy, it doesn't need as many cholesterol particles to carry the fat around the body for metabolism.
if you are on low carb diet, your cholesterol levels should be higher than the avg folks cuz fat cannot exist in our blood without causing problems, cholesterol is required to serve as a carrier for the fat around our body for metabolism.
