@Honda91, allow me to map your route out for you.
Frankly, where else have you already been and not repeating visit? You seem to be avoiding some best parts.
btw, who;s wendy and julian? (if you no kids)
Your plan looks like the fastest and most convenient Coast-to-Coast route Hate to point it out, but I'm concerned about your tentative itinenary, which lacks some nice sights, thrills and adventures.
Just a few cautions in your plan:-
1) Driving
i see 383+700km in a day?...Although your are driving 110km/h. With stoppages for snapshots, 15 mins car-naps, brown tourist signs turnoffs, toilet/smoke/coffee breaks, meals, grocery/snacks shopping, your touring speed is realsistically 50km/h only. Take a stretch/walk every 60-90 mins driving. Pls work out your drive day, based on 50km/h. (Thus 4 hrs/200km - 6 hrs/300km per day). Not forgetting for your trip period, the sky after lunch 2pm is already dimming like our 6pm, and dark by 5pm.
Thus 3-4 hours/200km drive a day is at nice relaxing pace and cover enough ground for us.
For us, usually the day aggregates with 3 hours drive and 3-4 hours : visit/foot exploration of attraction sites
2) Drive Sceneries
Your route is mostly coastal, will vomit blood seeing hundred miles of beaches/ocean surfs, too many days in a stretch. Best to alternate routes between sea, farmland, outback every 2-3 days esp on the East Coast drive.
3) Sightseeing
You seem to be missing several good destinations:
- Basselton+Margaret+Pemberton+Albany Area, (unless you been)
- Alice+Uluru+Cooperpeddy (the Real Outback),
- and esp the reputed National Parks for nice bush walks and hikes.
Give Snowy inland a miss, most in-roads closed, small winter resort cf. other countries (Note; it is the only ski area in Australia). Coastal Mel-Syd has more to see, eg walruses up-close (feeding distance) lying on rocks./ Kiama blowhole / nice undulating hills drives alongside meadows, interpersed with seaside towns/resorts.
If you have done other NPs, Blue mountain/3 sisters is pathetic, nothing more than the closest nature outlet/view for Sydney ppl/ touch-go tourists.
4) Adventures
Insert some adventures in your trip, to spice up your tour:-
Dirt Riding WestMoto Park(2 hrs NE of Perth, do together with Pinnacle?)
Mountain Biking, Abseiling, Baloon/Buggy/Dune Rides (several places)
Kite rides, Sky diving, Base Jumping???...lol
For mild thrills, many NPs hikes have interesting challenges, eg. suspension bridges, crevices/cave hikes, ladder climbs, glass walkways, within them, just not publicised much.
Fishing, bait or fly fishing?...(can't comment yet, beginer)
Re-look at my suggestion. I believe it's quite balanced, and span out yr extra 8 days better.
You'll still get your marathon driving from Day 10 to Day18..
5) Wildlife
Cape LeGrande NP is a rare place in OZ where you have kangaroos living on the beach, or you can have breakfast with wallabies in Grampians, together with some nice rock hikes/climbs, so does Porongarup NP, and its glass skywalks. In small inland towns' hilltops, look up the trees, you can catch koala bears perched up there, sometimes in pairs. or wombats wandering. Along road to Pinnacles, there is a park stop with koalas / wombats too. Even penguins sunset beaching can catch at 12 apostles or further west beaches along Port Campbell and Port Fairy (these sites must read up from OZ/TW forums). As for crocodiles, must go for Northern Territory. All the things you see in OZ tourism ads, real and free, no need pay $30 each to visit animal zoos/farms/philip Island. (Our zoo is already the best in the world).
Maybe we are more into National Parks hopping, as opposed to your City-hopping.
But cities are normal in OZ,it's the wild and the landscape, that's the Aussie thing!

10am: drive off or hike off (if parked spot is attraction area)
1 pm : lunch (Eat-out, save daylight time)

5-6 pm Watch sunset, look for campsite, (kickball with kids), settle in.campfire, cooking.
6 - 9 pm Cook, bbq & eat and washing up, bonfire chats/story-telling.
9 pm Games, surfing/reading, movies (fishing this coming trip around)
