tried something and it works: if you can't finish that bottle of wine that you like (keep in mind, it should be a decently good bottle of wine), if you have like half a bottle left, i would highly recommend that you pour it into a half bottle and recork is as tight as possible.

The amount of air between the surface of the wine and the cork is not much hence the oxidation doesn't happen that much and it helps keep the wine naturally over a much longer period of time. I had done it with a 2007 merlot from a good US producer. I poured the remaining in a half bottle, corked it and put it in my wine fridge. I opened it a week later and it has developed very nicely and tasted even nicer than when I had first opened it.

it's good to invest in a half bottle of wine so you can reuse the bottle. Try it and let me know!

Organised a Portuguese wine tasting last Saturday, as I mentioned earlier. It was a great success where the friendly wine merchant from Portuguese introduced 7 wines: 3 whites, 3 reds and a Port. Check out the blog for the photos and tasting notes!

it's a very good producer from a vintage that's underrated. i would buy a couple of not for my italy trip this weekend.

Just woke up this morning after a long flight and a long night out.
Some wine report:

Had a very nice cured beef panino at a reputed panini place and washed it down with a glass of their house pour. No label on the bottle, just pour.

For pre-dinner we went to a wine bar for some light snacks and a glass of sparkling wine made in the same method as champagne but using Chardonnay and Pinot Nero: 2006 Frescobaldi Brut Millesimato Trento DOC Metodo Classico

For dinner with 4 full fledged courses, it was paired with a 2007 Fontodi Chianti Classico. Very delicious wine from a very good producer from a great vintage that paired well with all of our foods.

More wine updates as the days go by.

Okay, I have ard 60bucks+- to spend on a red wine. Whats the best bang for buck one I can get. :o Doesnt matter the country of origin. Perhaps a wine that i can drink n chill over chips or pizza.. :o

i would say get a nice rhone wine. A gigondas or something from the southern rhone. lookout for 2007 vintage that's very good but needs some air. '05 should be ready for business anytime now.

another region for nice pizza wine is of course italian wines. a nice chianti classico from the 06 or 07, that'll go pretty well with almost any food.

There's a good Chianti Riserva selling at Jasons or 360 Market at Ion. I saw it on sale at $28 a few weeks back at Ion, not sure if they still have it. '07 Castello di Oliveto Chianti Reserva to be precise.

Ikileo, so nice of you to think of us while your thousands of miles away!
I'll be heading to Tuscany end of May as well, so do share some tips when you're back.
I'll say again that the bisteca in Florence is a memory deeply etched in my mind, so do try it!

Will you be going Montepulciano and Montalcino? Two of Italy's most regal wines there, will you be trying both? Have heard great things about the Syrah from Cortona (Arezzo) too...

just woke up from a big night of calories. shared among 6 people, we had 3 wines:

White: 2008 Guicciardini Strozzi Vernaccia di San Gimignano Cusona 1933 (made from Vernaccia grapes)

Red: 2006 Antinori Chianti Classico Riserva Tenute Marchese

White: 2009 Tenuta Guado al Tasso (Antinori) Vermentino Bolgheri (made from Vermentino grapes)

Drank these wines with some classic ragu pasta, florentine steak, butter chicken, salami & melons and dessert. My heart and stomach was going to explode from the calories last nite. But very good wines at a very very good price.
