Base on what I been reading, the issue is simply because the puck is unable to produce enough resistance to hold water from escaping too quickly. If you use a blind filter and it works holding pressure, there's really nothing much to suspect about.

If you do lower the pressure, the clarity will generally be reduced, sourness will be reduced, bitterness increase. (Suppose 15g 25 secs)
It may not solve your problem.

Different strokes for different folks, now and then, you will hear who and who saying which is better, it's actually base on preference. The science part of it, it also depends on the types of coffee you use, the dose you use and duration of your pull. I suggest keeping to the manufacturer's setting because it will all work.

A lot of Italians set their vib pumps higher, because there's lower flow rate. Their rotary pumps models are still sticking to around 9.

From the other video should be

I dont think it's the machine too because the only thing that stands between the machine and the final extraction is the bed of coffee..

The video is a mitica that I am using. I am at 12 on the meter too, so it's not high in any way as my shots have been consistently good for the past year. I also do not think you should fiddle with the opv.

I think Grinder setting\issue and beans you are using are still the higher possible suspects.

If your grinder can't grind fine enough, just add more powder.
Maybe your beans are the problem too.
